Coinbase is pissing me off. How do I withdraw my coins safely? How do bitcoins wallets work?

They’re giving out information on thousands of users to the Fed. I know tax evasion is illegal; I don’t plan on evading my capital gains taxes. But the whole point of digital currencies is gaining back your privacy in cyberspace. There doesn’t need to be a digital record of every goddamned thing I do with my money with my full name written all over it and with time stamps that some company or government entity can exploit whenever they feel like it.
How do I withdraw my bitcoin into my own wallet for safe keeping? What is the best way to store my bitcoin outside of an exchange? I need help to avoid scams and unnecessary risk. I have no idea how to bitcoin outside of Coinbase.

Is it safe to transfer my Bitcoin from Bread(wallet) to a Trezor while these forks are happening?

Sorry for the newbie question, I'm overwhelmed with work at the moment and don't have much time to research this myself unfortunately, so I was hoping you guys might be able to point me in the right direction.
I have my BTC in Bread (formerly Breadwallet), but decided to buy a Trezor which should be arriving in the mail later today.
I see that a soft fork is happening now/has happened and that the another hard fork is probably happening soon.
I read that perhaps there's some danger in transferring BTC at the moment with the forks happening, if the chain splits and there are two similar, yet different, types of "Bitcoin", which could lead to the transferred Bitcoin being converted to the new one. And also that I could do something that would mean I lose the possibility to take advantage of any 'airdropped' fork coins.
Is it safe for me to transfer my BTC from Bread to my new Trezor today? Is there anything in particular I should be doing to make sure nothing goes wrong?

Trying to get my Bitcoin Cash out of Electrum. Is it safe to create an Electron Cash wallet with a still unconfirmed Bitcoin transaction in the original Electrum wallet?

At noon yesterday, I initiated a transfer of my Bitcoin in Electrum to a new Electrum wallet. I am doing this prior to creating an Electron Cash wallet with my original Electrum wallet seed, as is recommended by Electrum.
The transaction is still unconfirmed despite using a reasonable fee for the time (although the recommended fee has skyrocketed since). My question is, is it safe and advisable to create an Electron Cash wallet with a still unconfirmed Bitcoin transaction in the original Electrum wallet?
There's a lot of value at play here so I want to be certain my Bitcoin and Bitcoin Cash are safe.

i formatted my laptop and needed to download and install the bitcoin qt again, after i copy and paste my wallet.dat its showing that it has to sync for 8 years, and i think it would take weeks beforenit fully sync. i wonder if i can save my wallet.dat and paste it to electrum? but is it safe? i look at youtube and no instruction on how to do that.
